      Pearlman is determined to make babka everyone's favorite. A pandemic pivot from operating a wedding-cake shop to opening an online (then brick-and-mortar) store enabled this Culinary Institute of America-trained baker to specialize in babka, inspired by her great-grandmother, Nana Mary, who worked in many New York City bakeries and dreamed of opening her own. Pearlman isn't kidding in her subtitle. Aside from traditional cinnamon and chocolate babka varieties, she not only concocts dozens of fillings and syrups but also gives home chefs step-by-step instructions (with photographs) for creating and combining their own personal babkas.
