Beginning with basics, such as buying and handling, Billis provides detailed instructions, along with step-by-step photographs illustrating how to choose the right cut of chicken for any meal. What follows is a series of easy-to-understand recipes that can serve a family or a crowd: sheet pan fajitas with lime crema, pepper jack guacamole burgers, and green-and-white chicken chili, along with options for marinades (such as orange-chipotle) or all-purpose sauces (such as chimichurri).
